How do you cook with stainless steel frying pans?

my parents got us a SUPER nice tri clad stainless steel set, has been great for most things i cook. problem is my husband loves breakfast food, and i can't get it to stop sticking for omlets and fried eggs. tried butter, olive oil, and pam. none have worked.....How do you cook with stainless steel frying pans?
I'd recommend that you get a 6 or 8 inch omelet pan, that's nonstick. Stainless is great to cook with, especially for developing the ';fond'; that develops during browning of foods.



Omelets: the protein in the egg matrix is too delicate for that type of heat. This is where the nonstick pans come in handy.



While ';sets'; of pans are very nice, many times a lot of the pieces go unused. I have 2 omelet pans, both nonstick, and they're worth the investment if used often.

SS frypans cook on lower heat than most others. Add the fat before it starts heating up. Diet margarines have water in them so don't use them for frying. Canola or olive oil is best (a little margarine can be added to the oil for flavour, if you like) Try it with and without the lid to see which works best for you. Good luck!
preheat the pan, use cooking spray lightly, lower the heat, takes a bit of practice to find the right temp for your particular pans.



Otherwise a nonstick omelet pan for that use is best.
Lower your heat.

SS require less heat to get hot.
